We produce a range of cheeses to occupy a large tasty cheese board.
Shropshire Red A rich russet red cheese with a smooth texture similar to a Red Leicester but with more bite.
Tanatside has a similar taste to Wensleydale cheese with a dry but slightly crumbly texture and tangy taste.
Tanatside with Cranberries sweet and delicious with cranberries to chew.
Tanatside with Apricots a lovely blend of tangy Tanatside cheese with tarty tasting apricots which really tickles the tastebuds.
Smoked Tanatside - We cut our Tanatside cheese into 3 inch high rounds and take them to Chirk Trout Farm approximately 15 miles away, where Richard Simpson carefully cold smokes the cheese for three days. This leaves a good balance of cheese and smoked flavours. If you need more of a kick we challenge you to eat the rind! We have won a Silver award at World cheese awards 2008.
Marches Blue - This recipe has taken a long time to master but we have finally got a balance between the creaminess and the blue flavour. This cheese is not pressed and is hand salted and pierced 12 times over 2 weeks. This Cheese has won a Diamond award at the HEFF awards and a highly commended at the Nantwich International cheese show 2008. A Gold award at Royal Bath and West 2009.
Abertanat Cheddar -This traditional clothbound cheese is matured for 5 months at Abertanat.
